Healthy Mexican Dish

Mix together:

  • Cooked quinoa

  • Taco Seasoning

  • Black beans

Dice and add to quinoa base:

  • Red peppers

  • Onion

  • Tomatoes

  • Avocado

Eggs and Hash

Chop:

  • potatoes 

  • onion 

  • beets 

  • carrots

  • any other farmer market vegtables 

Place in skillet with coconut oil

seasoned with:

  • Salt/Pepper

  • Garlic Powder

  • Onion Powder 

  • Parsley

  • Thyme

Top with:

  • eggs over easy

  • optional hot sauce

My Favorite Drinks

In a blender:

  • Coconut water

  • Mango (frozen)

  • 1" chunk of ginger

  • Large handful of spinach

In a juicer:

  • 1" chunk of peeled ginger

  • Lemon

  • Kale 

  • Spinach

  • Green Apple

Fresh Hot Tea

  • 8-16oz boiling water

  • 1" chunk of peeled ginger

  • 1-2 Organic lemon slices
